Gareth Reynolds & Sam Tripoli Make Eggnog & Soyrizo Latke Waffles on Something’s Burning


On this Christmas Edition of Something Burning, Bert invites Gareth Reynolds and Sam Tripoli in to make Egg Nog and Soyrizo Waffles. The recipes were a little more complicated than what Bert had hoped for, but like every episode, it ends up turning out surprisingly delicious.

Soyrizo Latke Waffles, Eggnog, and a Gingerbread House Recipe:

EGGNOG:

  • Separate 6 EGG YOLKS
  • Whisk together egg yolks with ½ cup granulated sugar
  • In a saucepan over medium-high heat, combine
  • 1 cup HEAVY CREAM
  • 2 cups MILK
  • ½ teaspoon GROUND NUTMEG
  • Pinch of salt
  • Once it simmers, temper eggs by adding small spoonfuls of milk
  • mixture to egg mixture until it tempers then add it all.
  • Put it all back in the pot and continue cooking/whisking until barely thickened.
  • Take off heat and ¼ teaspoon VANILLA
  • Pour in Pitcher and put in freezer to chill quickly

Latke Waffles:

  • Peel and grate 3 potatoes
  • Wring out excess liquid using a dish towel
  • In a bowl, mix TWO EGGS, ONE TEASPOON SALT, and some PEPPER with shredded potato
  • Cook soy chorizo and one onion
  • FOLD SOYRIZO MIXTURE INTO POTATOES UNTIL COMBINED

MAKE THE LATKE WAFFLES

  • Add about 1-1½ cups mixture to waffle iron and cook until golden brown
  • Serve with sour cream and/or applesauce
  • Fried Egg

SERVE THE EGGNOG WITH SOME CINNAMON AND WHIPPED CREAM
